Joey Ambroise is a baker in New Town from Crazy Town working for the Fortunato Regime.

After moving to Nouvelle Ville, in search for a better and richer life, he opened up Joey's Baked Goods, was the preferred baker for Stracci Family weddings and was frequently called up to their mansion to bake them desserts after lunch and dinner. To keep him under control for good, family psycho pony Pinkie Pie kept an eye over the explosive racket in his basement, opened by Croc Stracci.
However, he was forced to sell out by Charlie Trapani during the Five Families Mob War. Pie's racket soon followed. Afterwards, Boom Boom Tradicional of the Corleone Family was send to run Ambroise's rackets until 2012.
In 2014, the Fortunato Regime bought out Joey and his bakery and added it to their empire.
